Mummon Muffins

*Delicious, fluffy muffins perfect for breakfast or a snack. Makes 12 muffins.* *Preparation time: 30 minutes*
Ingredients:
- 2 eggs
- 1 dl sugar
- 1 dl milk
- 1 dl oil
- 3 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla sugar
- A pinch of salt
- Optional: berries or nuts
Instructions:
1. Preheat the oven to 200°C (400°F).
2. In a bowl, crack the eggs and add the sugar. Whisk until the mixture is light and fluffy.
3. Add the milk and oil, and mix well.
4. In another bowl, combine the flour, baking powder, vanilla sugar, and salt.
5. Add the dry ingredients to the wet mixture and stir until everything is well combined.
6. If desired, fold in berries or nuts into the batter.
7. Divide the batter into a muffin tin, filling each cup about 2/3 full.
8. Bake in the oven for about 15-20 minutes, until the tops are golden brown.
9. Allow the muffins to cool slightly before serving. Enjoy!
