Ingredients:
- 400 g fresh fish (such as salmon or perch) - 2 tbsp olive oil
- 1 lemon (juice and zest)
- 2 garlic cloves, crushed
- 1 tsp salt
- 1/2 tsp black pepper
- 200 g cherry tomatoes, halved
- 100 g fresh basil, chopped
- 300 g boiled potatoes, diced
- 100 ml white wine
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Add crushed garlic and sauté until golden.
3. Add the fish fillets to the skillet and season with lemon juice, salt, and pepper. Cook for about 4-5 minutes on each side until cooked through.
4. Add cherry tomatoes, potatoes, and white wine to the skillet. Allow to cook for a few more minutes until the tomatoes are soft.
5. Finish the dish with lemon zest and chopped basil. Serve immediately.
