A delicious Boston bun filled with homemade apple jam and cinnamon, perfect for a festive treat.
Preparation Time: 1 hour 15 minutes
Serving Size: 12-15 pieces

Ingredients:

- 300 ml milk or water
- ½ block of yeast
- 2 tsp psyllium
- 1 tsp salt
- 100 g sugar
- 1 egg
- ½ tbsp cardamom
- 700-800 g all-purpose flour
- ½ tsp xanthan gum
- 100 g soft butter or margarine
- Oven-safe apple jam
- Cinnamon
- Butter for greasing the pan
- Egg for brushing
- Powdered sugar and water for decoration
- Pearl sugar for topping

Instructions:

1. Warm the milk or water and dissolve the yeast in it. Add psyllium and let it swell for a moment.
2. Mix in the salt, sugar, egg, and cardamom to the dough.
3. Combine xanthan gum with the flour and add more than half of the flour to the dough while kneading.
4. Incorporate the soft butter and the remaining flour. Knead the dough with a mixer for about 3-5 minutes.
5. Roll the dough into a rectangle, about 1 cm thick.
6. Spread apple jam over the dough and sprinkle with cinnamon.
7. Roll the dough tightly into a log and cut it into slices about 4 cm thick.
8. Place the dough pieces in a greased springform pan, with the spiral side facing up.
9. Allow the bun to rise in a warm place for about 30 minutes. Brush with egg and sprinkle pearl sugar on top.
10. Bake at 225°C (437°F) for 25-30 minutes or until the bun is beautifully golden.
11. Remove the bun from the pan and let it cool. Optionally, decorate with a powdered sugar and water mixture.
