A delicious Finnish sweet bread made with applesauce and a hint of cinnamon, perfect for sharing. Preparation Time: 2 hours (including rising time)
Serving Size: 8-10 servings
Ingredients:
- 2.5 dl milk
- 1 egg
- 1 tsp salt
- 1 dl sugar
- Pearl sugar for topping
- 7 dl all-purpose flour
- 1 egg for brushing
- 1 tbsp fresh yeast
- 1 dl applesauce
- Cinnamon to taste
- 75 g butter
Instructions:
1. Warm the milk to body temperature (about 37 °C).
2. Stir the yeast, salt, egg, and sugar into the milk, whisking until the sugar dissolves.
3. Gradually add part of the flour to the mixture and mix well.
4. Incorporate the applesauce and cinnamon, stirring until smooth.
5. Gradually add the remaining flour and knead the dough for about 10 minutes until it is elastic.
6. Add the melted butter to the dough and knead for a little longer.
7. Cover the dough with a cloth and let it rise in a warm place for about 1 hour.
8. Once the dough has risen, roll it out into a flat sheet and then roll it up into a log.
9. Place the log in a greased baking pan and let it rise for another 30 minutes.
10. Brush the top with the egg wash and sprinkle with pearl sugar.
11. Bake at 175 °C for about 25-30 minutes until the cake is beautifully golden brown.
12. Allow to cool before serving.
