Ingredients:
- 200 g spaghetti
- 100 g bacon or pancetta
- 2 egg yolks
- 50 g Parmesan cheese (grated)
- 1 garlic clove (finely chopped)
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted boiling water according to the package instructions until al dente.
2. While the pasta is cooking, fry the bacon or pancetta in a pan over medium heat until crispy. Add the garlic and cook for an additional minute.
3. Once the pasta is cooked, drain it, reserving a bit of the cooking water.
4. Add the hot pasta to the pan with the bacon and garlic, mixing well.
5. Remove the pan from heat and quickly stir in the egg yolks and grated Parmesan, mixing to create a creamy sauce without scrambling the eggs.
6. If necessary, add a little reserved cooking water to achieve a creamy consistency.
7. Season with salt and black pepper to taste.
8. Serve immediately and garnish with fresh parsley if desired.
