Vispipuuro with Lingonberries

A delicious and refreshing dessert made from lingonberries and semolina, this traditional Finnish treat is the perfect sweet ending to a meal. Preparation Time: 30 minutes

Ingredients:
- 1 liter of water - 3 dl lingonberries
- 1½ dl semolina
- 1½ dl sugar
Instructions:
1. Pour the water into a saucepan and bring it to a boil.2. Add the lingonberries to the boiling water and cook for about 5-10 minutes until the berries are soft and juicy.
3. Strain the lingonberry juice away from the berries. You can also puree the berries if you want a chunkier texture in the porridge.
4. Return the lingonberry juice to the saucepan and bring it back to a boil.
5. Gradually add the semolina while stirring continuously. Cook on low heat for about 5-10 minutes until the porridge thickens.
6. Add the sugar and mix well. Let the porridge cool for a moment.
7. Whip the porridge with an electric whisk or hand mixer until it is fluffy and light in color.
8. Serve the vispipuuro with your choice of toppings, such as whipped cream or vanilla sauce.
