A delicious and creamy dessert made with blackcurrants, perfect for a refreshing treat.
Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 500 g blackcurrants
- 1 l water
- 100 g sugar (to taste)
- 200 g semolina
- 1/2 tsp vanilla sugar (optional)
Instructions:
1. Rinse the blackcurrants and remove the stems.
2. Boil the blackcurrants in water for about 10 minutes until the berries soften.
3. Strain the berries to separate the juice from the fruit.
4. Pour the blackcurrant juice back into the pot and add the sugar.
5. Simmer the juice over low heat.
6. Gradually add the semolina while stirring continuously to prevent lumps from forming.
7. Allow to cook for about 5-10 minutes until the mixture thickens.
8. Remove the pot from the heat and add the vanilla sugar if desired.
9. Stir the berries back into the mixture and let it cool.
10. Serve the whipped pudding cold, optionally with whipped cream or yogurt.
