A delightful and refreshing dessert made with lingonberries that melts in your mouth. Perfect for both everyday and special occasions. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 dl lingonberries - 1 dl sugar
- 1 dl water
- 1 dl porridge oats (such as semolina)
- 4 dl milk
- 1/2 tsp salt
- 1/2 tsp vanilla sugar (optional)
- 1-2 tbsp lemon juice (optional)
Instructions:
1. In a saucepan, cook the lingonberries, sugar, and water until the berries are soft and the mixture becomes jam-like. 2. Add the porridge oats and mix well. Simmer on low heat for about 5-10 minutes until thickened.
3. Remove the pot from heat and let it cool to room temperature.
4. In a separate bowl, whip the milk until frothy. Gently fold in the cooled lingonberry mixture into the milk.
5. Add salt, vanilla sugar, and lemon juice if using. Mix well.
6. Pour the pudding into serving dishes and refrigerate for at least one hour before serving.
