Rhubarb Whipped Porridge

A delightful and refreshing dessert made from fresh rhubarb, perfect for summer! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g rhubarb
- 1 dl sugar
- 5 dl water
- 1 dl lingonberries (fresh or frozen)
- 2 dl semolina
- 4 dl milk
- 1 tsp vanilla sugar (optional)
Instructions:
1. Peel and chop the rhubarb.
2. In a pot, cook the rhubarb with sugar and water for about 10-15 minutes until it softens.
3. Add the lingonberries and cook for a few more minutes.
4. Stir in the semolina and let the mixture simmer over low heat for about 5 minutes until the semolina is cooked.
5. Remove the pot from heat and pour the porridge into a bowl. Allow it to cool to room temperature.
6. Once cooled, whip the porridge until fluffy. Add milk and vanilla sugar to taste if needed.
7. Serve chilled, optionally with cream or vanilla sauce.
