Ingredients:
- 2 tbsp olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 400 g crushed tomatoes
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley) for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic. Sauté until soft.2. Add the diced carrots, potatoes, zucchini, and bell pepper. Cook for about 5 minutes until the vegetables start to soften.
3. Pour in the vegetable broth and crushed tomatoes. Stir well and bring to a boil.
4. Reduce the heat and let the soup simmer for about 15-20 minutes until all the vegetables are tender.
5. Season with salt and pepper. Serve the soup garnished with fresh herbs.
