Ingredients:

- 1.5 kg chicken pieces (e.g., thighs and drumsticks)
- 2 tablespoons olive oil
- 150 g bacon, diced
- 2 large onions, chopped
- 3 garlic cloves, crushed
- 250 g mushrooms, sliced
- 2-3 carrots, sliced
- 2 bay leaves
- 1 teaspoon thyme
- 750 ml red wine (e.g., Pinot Noir)
- 500 ml chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Brown the chicken pieces on all sides until they have a nice color. Remove the chicken from the pot and set aside.
2. Add the bacon to the pot and cook until crispy. Add the onions and garlic, sautéing until they are soft.
3. Stir in the mushrooms and carrots, cooking for a few more minutes.
4. Return the chicken pieces to the pot. Add the bay leaves, thyme, red wine, and chicken broth. Mix well and bring to a boil.
5. Reduce the heat and let the pot simmer on low for about 1.5 hours, until the chicken is tender.
6. Season with salt and pepper to taste.
7. Serve warm, garnished with fresh parsley.
