A delicious Portuguese dish where pork is marinated in wine, creating a unique flavor experience. Preparation Time: 1 day + 2 hours
Serving Size: 4
Ingredients:
- 1 kg pork (e.g., shoulder or pork belly) - 2 dl red wine
- 2 tbsp olive oil
- 3 cloves garlic, crushed
- 1 onion, finely chopped
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 3 carrots, sliced
- 2 potatoes, diced
- 1 dl water or broth
Instructions:
1. Prepare the marinade by mixing red wine, olive oil, crushed garlic, chopped onion, bay leaves, salt, black pepper, thyme, and rosemary in a large bowl.2. Add the pork to the marinade, ensuring it is fully covered. Cover the bowl and refrigerate for at least 24 hours.
3. Remove the meat from the marinade and drain it, saving the marinade.
4. Heat a large skillet or pot over medium heat and sear the pork on all sides.
5. Add the sliced carrots and diced potatoes to the pan, mixing well.
6. Pour the reserved marinade and water or broth over the meat and vegetables.
7. Cover the pot and simmer on low heat for about 1.5 hours, until the meat is tender and cooked through.
8. Serve hot with fresh bread or mashed potatoes.
