Ingredients:
- 1 kg chicken (such as chicken breasts and thighs)
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 carrots, sliced
- 300 g mushrooms, sliced
- 500 ml red wine
- 250 ml chicken broth
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp thyme
- 1 tsp rosemary
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the butter in a large skillet over medium heat. Add the onion and garlic, and sauté until soft.
2. Add the chicken pieces to the skillet and brown them on all sides.
3. Add the carrots and mushrooms, and continue to cook for a few more minutes.
4. Pour in the red wine and chicken broth. Add the tomato paste, bay leaves, thyme, and rosemary. Mix well.
5. Bring the mixture to a boil, then reduce the heat and cover the skillet. Let it simmer for about 1.5 hours or until the chicken is cooked through and tender.
6. Season with salt and pepper. Serve the dish garnished with fresh parsley.
