A delicious chicken dish cooked in red wine, perfect for a cozy dinner.

Ingredients:
- 1 rooster or chicken
- 1 bottle of red wine
- 200 g bacon
- 2 onions
- 3 garlic cloves
- 3 carrots
- 200 g mushrooms
- 2 sprigs of fresh thyme
- 2 bay leaves
- 1 tbsp flour
- Salt and pepper
- Olive oil
- Parsley (for garnish)
Instructions:
1. Cut the rooster into pieces and season with salt and pepper.
2. In a large pot, brown the bacon in olive oil and set aside.
3. In the same pot, sear the chicken pieces until golden brown.
4. Add chopped onions, garlic, and carrots to the pot and sauté for a few minutes.
5. Stir in the mushrooms and cook until they are tender.
6. Sprinkle the flour over the mixture and stir well.
7. Pour the red wine into the pot and add the bacon, thyme, and bay leaves.
8. Allow the dish to simmer on low heat for about 1.5 hours, until the meat is tender.
9. Serve with fresh parsley on top.
