Ingredients:
- 1 tablespoon olive oil - 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 potatoes, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 100 ml cream (optional)
- Fresh parsley, for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft. 2. Add the carrots and celery, cooking for a few more minutes.
3. Stir in the diced potatoes, vegetable broth, thyme, salt, and black pepper. Bring to a boil, then reduce the heat. Let it simmer for about 20 minutes, or until the vegetables are tender.
4. If using cream, add it just before serving and mix well.
5. Serve hot and garnish with fresh parsley.
