Hiihtelypasta with Parmesan Chicken

Description: A delicious pasta dish with tender chicken, tangy Dijon mustard, and fresh arugula, topped with grated Parmesan cheese. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 onion
- 1 package chicken fillets (400 g)
- Oil for frying
- 25 g butter
- 3-4 tablespoons coarse Dijon mustard
- 1.5 dl light lager beer
- Salt to taste
- Black pepper to taste
- 2 dl Parmesan cheese, grated
- Pasta of your choice, to appetite
- 1 bunch arugula
Instructions:
1. Cook the pasta according to package instructions.
2. Chop the onion and dice the chicken fillets.
3. Sauté the onion in a wok or high-sided frying pan with oil until translucent.
4. Add the chicken pieces to the pan and brown them.
5. Stir in the mustard and butter, then reduce the heat to low.
6. Season the mixture with salt and black pepper.
7. Grate the Parmesan cheese and wash the arugula.
8. Once the pasta is ready, drain it and add it directly to the frying pan, including a little of the pasta cooking water.
9. Increase the heat to high and mix in the Parmesan cheese and arugula.
10. Taste and adjust seasoning with more salt, black pepper, or mustard if needed.
11. Serve hot with a light lager, fruity APA, or dry cider.
