Mushroom and Cottage Cheese Pasta

A creamy and flavorful pasta dish featuring mushrooms, garlic, and cottage cheese, perfect for a cozy dinner.

Serving Size: 4
Ingredients:
- 300 g mushrooms (preferably wild mushrooms or button mushrooms)
- 4 cloves of garlic
- Oil and butter for frying
- 2 dl dark lager beer (lightly hopped)
- 1 tbsp honey
- Pasta (according to hunger)
- Salt and black pepper
- 1/2 tsp dried thyme
- 1/2 dl pasta cooking water
- (2 tbsp truffle oil)
- About 2 dl cottage cheese
- About 2 dl arugula or baby spinach
Instructions:
1. Bring a pot of water to a boil for the pasta.
2. Clean and chop the mushrooms and garlic.
3. Sauté the mushrooms and garlic in a large high-sided skillet with a mix of butter and oil until soft.
4. Add the beer and honey to the skillet, stir and let simmer until soft. Season with thyme.
5. Cook the pasta according to the package instructions.
6. Blend the mushroom mixture into a paste using an immersion blender, adding a bit of pasta cooking water (and truffle oil) to achieve the desired consistency, and season with salt and pepper.
7. Rinse and chop the arugula slightly.
8. Combine the rinsed pasta with the mushroom paste, cottage cheese, and finally the arugula. Heat gently while stirring.
9. Serve immediately with a glass of beer.
