A delicious and nutritious twist on the classic mac & cheese, combining cauliflower and spelt pasta. A perfect weeknight meal that the whole family will enjoy!

Ingredients:

- 300 g spelt macaroni
- 1 small cauliflower
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 400 ml milk
- 200 g grated cheese (e.g., cheddar)
- Salt to taste
- Black pepper to taste
- 1 tsp mustard powder (optional)
- 50 g breadcrumbs (for topping)

Instructions:

1. Cook the spelt macaroni according to package instructions until al dente. Drain and set aside.
2. Chop the cauliflower into small pieces and boil for about 5 minutes until tender. Drain and set aside.
3. In a large pot, melt the butter over medium heat. Add the flour and cook for about 1 minute.
4. Gradually add the milk while stirring continuously until the mixture is smooth. Heat until it begins to boil.
5. Stir in the grated cheese until melted and the sauce is creamy. Season with salt, black pepper, and mustard powder if using.
6. Combine the cooked macaroni and cauliflower with the cheese sauce. Mix well.
7. Pour the mixture into a baking dish and sprinkle breadcrumbs on top.
8. Bake in a preheated oven at 200°C (392°F) for about 15 minutes or until the top is beautifully golden brown.
