Ingredients:
- 250 g macaroni
- 100 ml grated nuts (e.g., cashews)
- 200 ml plant-based milk
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- Fresh parsley (for garnish)
Instructions:
1. Cook the macaroni in salted water according to package instructions. Drain and set aside.
2. Meanwhile, blend the grated nuts, plant-based milk, nutritional yeast, lemon juice, garlic powder, salt, black pepper, and smoked paprika in a blender until smooth.
3. Pour the nut cheese mixture into a saucepan and heat over low heat, stirring until it begins to thicken.
4. Add the cooked macaroni to the saucepan and mix well, ensuring all pasta is coated with the sauce.
5. Stir in the olive oil and mix again.
