Vegan Mac n Cheese

A delicious and creamy alternative to traditional cheese pasta. This recipe is easy to prepare and takes only a little time. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 300 g macaroni - 1 cup diced potatoes
- 1/2 cup grated carrots
- 1/4 cup nutritional yeast
- 1/2 cup vegetable broth
- 1/4 cup coconut milk
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp turmeric
- Salt and pepper to taste
Instructions:
1. Cook the macaroni according to package instructions in salted water until al dente. Drain and set aside. 2. Boil the diced potatoes and grated carrots in a small amount of water until soft. Drain the water.
3. Blend the cooked potatoes and carrots, nutritional yeast, vegetable broth, coconut milk, lemon juice, garlic powder, and turmeric in a blender until the mixture is smooth and creamy.
4. Pour the cheese sauce over the cooked macaroni and mix well. Season with salt and pepper to taste.
5. Serve warm and enjoy!
