Ingredients
- 2 tbsp tomato paste - 2 garlic cloves, minced
- 2 carrots, diced
- 1 onion, chopped
- 1½ tsp garam masala
- 200g green lentils
- 800ml vegetable broth
- 1 tbsp oil
Instructions
1. In a pot, heat the oil over medium heat and sauté the chopped onion and minced garlic until softened. 2. Stir in the tomato paste and garam masala, cooking for a few minutes until fragrant.
3. Add the diced carrots to the pot and stir to combine.
4. Rinse the green lentils and add them to the pot along with the vegetable broth. Bring to a boil.
5. Reduce the heat and let it simmer for about 20 minutes, or until the lentils are tender.
6. Taste and adjust the seasoning, adding salt if needed before serving.
