Ingredients:
- 250 g pasta (such as penne or fusilli)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- Salt and pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted boiling water according to the package instructions. Drain and reserve a bit of the cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the bell pepper and zucchini, and cook for about 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes, salt, and pepper. Cook for a few more minutes until the tomatoes begin to soften.
5. Toss the cooked pasta into the vegetable mixture and add a little reserved cooking water if needed to moisten the dish.
6. Serve the pasta garnished with fresh basil and grated Parmesan cheese if desired.
