A delicious Vietnamese noodle soup with a flavorful broth, tender beef, and fresh herbs. Preparation Time: 45 minutes
Serving Size: 4
Ingredients:
- 200 g rice noodles
- 1 l chicken or beef broth
- 200 g beef (e.g., sirloin or brisket)
- 1 onion
- 2-3 slices of fresh ginger
- 2-3 star anise
- 1 cinnamon stick
- 2 tbsp fish sauce
- 1 tbsp sugar
- Fresh herbs (e.g., cilantro, mint)
- Lime wedges
- Chili (optional)
- 100 g bean sprouts
Instructions:
1. Cook the rice noodles according to the package instructions, drain, and set aside.
2. In a large pot, heat the chicken or beef broth. Add the sliced onion, ginger, star anise, and cinnamon stick.
3. Simmer the broth on low heat for about 20-30 minutes to develop the flavors. Strain the broth and return it to the pot.
4. Stir in the fish sauce and sugar. Bring to a boil.
5. Slice the beef thinly and add it to the soup. Cook for 1-2 minutes until the beef is cooked through.
6. Divide the rice noodles among serving bowls and ladle the hot broth over them.
7. Garnish with fresh herbs, lime wedges, chili slices, and bean sprouts.
8. Serve immediately and enjoy your delicious phở-keitto!
