Bean and Lentil Soup

A hearty and nutritious soup made with a variety of beans and lentils. Perfect for a comforting meal. Preparation Time: 1 hour 30 minutes (plus soaking time)
Serving Size: 4 servings
Ingredients:
- 1 cup adzuki beans
- 1 cup green peas
- 1 cup yellow peas
- 1 cup yellow lentils
- 1 cup red lentils
Instructions:
1. Soak the adzuki beans in water for 8-10 hours, or alternatively in hot water for 40-60 minutes.
2. Drain and rinse the soaked adzuki beans, then cook them in a pot of boiling water for about 2 hours, or until soft.
3. In another pot, cook the green peas and yellow peas in boiling water for 10-20 minutes, or until tender.
4. In a separate pot, cook the yellow lentils and red lentils in boiling water for 10-15 minutes until they are soft.
5. Once all the beans and lentils are cooked, combine them in a large bowl or pot and mix well. Serve with your choice of sides.
