A delicious and comforting ramen soup packed with vegetables and tofu. Perfect for a quick meal!

Serving Size: 2 servings
Ingredients:
- 200 g ramen noodles
- 1 liter vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 green onion, chopped
- 1 carrot, julienned
- 100 g mushrooms (e.g., shiitake), sliced
- 100 g tofu, cubed
- 2 boiled eggs (optional)
- A handful of fresh cilantro or basil for garnish
- Chili flakes to taste
Instructions:
1. Cook the ramen noodles according to the package instructions, drain, and set aside.
2. Heat the vegetable broth in a pot and add the soy sauce and miso paste. Stir well.
3. Add the julienned carrot, sliced mushrooms, and tofu to the broth. Let it simmer for about 5-7 minutes, until the vegetables are tender.
4. Divide the cooked noodles into bowls and pour the hot broth with vegetables and tofu over them.
5. Garnish with chopped green onion, boiled eggs (if using), fresh cilantro, and chili flakes.
6. Serve immediately and enjoy!
