A flavorful and spicy shrimp and mushroom soup with a hint of coconut and lime. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 package frozen peeled shrimp
- 1 can mushrooms (fresh can also be used)
- 1 onion
- 2 cloves garlic
- 1 chili (preferably fresh)
- 1 can coconut milk
- 1 liter fish broth
- 2 tablespoons fish sauce
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions:
1. Peel and chop the onion and garlic. Dice the chili.
2. In a pot, heat a little oil and sauté the onion, garlic, and chili until soft.
3. Add the mushrooms and sauté for a few more minutes.
4. Pour in the fish broth and coconut milk. Bring to a boil.
5. Add the frozen shrimp and fish sauce. Let the soup simmer on low heat for about 5-10 minutes.
6. Stir in the lime juice and mix well.
7. Serve hot, garnished with fresh cilantro.
