A trendy and flavorful Vietnamese pho soup that can be made quickly or simmered for hours for a richer broth.
Preparation Time: 30 minutes
Serving Size: 4 servings

Ingredients:

- 200 g rice noodles
- 500 g beef (thinly sliced or stew meat)
- 1 liter beef broth (store-bought or homemade)
- 1 onion, sliced
- 2-3 slices of ginger
- 2-3 star anise
- 1 cinnamon stick
- 2 tbsp fish sauce
- 1 tbsp sugar
- Fresh coriander
- Fresh basil
- Lime, cut into wedges
- Chili, sliced (optional)
- Spring onions, chopped

Instructions:

1. Cook the rice noodles according to the package instructions and drain them.
2. Heat the beef broth in a pot and add the onion, ginger, star anise, cinnamon stick, fish sauce, and sugar. Let the broth simmer on low heat for about 10 minutes.
3. Add the beef to the broth and cook until the meat is done (about 5-7 minutes).
4. Divide the cooked noodles into four bowls.
5. Pour the hot broth and beef over the noodles.
6. Garnish with fresh coriander, basil, lime wedges, chili, and spring onions.
7. Serve immediately.
