A refreshing and eye-catching lemon cake with delicious lemon curd and whipped cream. The pink base is soaked in grapefruit soda, making it a perfect treat for summer celebrations.
Preparation Time: 1 hour + 30 minutes in the fridge
Serving Size: 10-12 servings

Ingredients:

- 200 g butter
- 200 g sugar
- 4 eggs
- 250 g all-purpose flour
- 1 tsp baking powder
- 1 dl milk
- 1 dl grapefruit soda (for soaking)
- 200 g lemon curd
- 3 dl heavy cream
- 100 g powdered sugar
- Food coloring (optional)
- Decorations (e.g., edible flowers)

Instructions:

1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Beat the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, mix the flour and baking powder together, then add alternately with the milk to the batter.
5. Pour the batter into the prepared pan and bake for about 30-35 minutes, until the cake is fully cooked. Allow it to cool.
6. Once the cake is cool, slice it in half. Soak the bottom layer with grapefruit soda.
7. Mix the lemon curd and whipped cream together and spread it on the soaked cake layer. Place the second cake layer on top.
8. Prepare the frosting: whip the heavy cream and powdered sugar together until stiff peaks form. Add food coloring if desired.
9. Frost the cake with the whipped cream and decorate as desired.
