- 200 g pasta (e.g., spaghetti or fettuccine)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. While the pasta is cooking, fry the bacon or pancetta in a skillet over medium heat until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the skillet with the bacon and garlic.
5. Remove the skillet from heat and quickly mix in the egg mixture with the pasta. Stir rapidly to ensure the eggs lightly cook but do not scramble. If the mixture is too thick, add reserved pasta water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired. Enjoy!
