Serving Size: 4 servings
Ingredients:
- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cooking cream
- 2 tbsp butter
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. In a pot, melt the butter and add the chopped onion. Sauté until soft.
4. Add the sliced mushrooms to the pot and cook until tender and the moisture has evaporated.
5. Pour in the vegetable broth and bring to a boil. Let it simmer on low heat for about 10 minutes.
6. Stir in the cooking cream and heat the soup for a few more minutes.
7. Season with salt and black pepper to taste.
8. Serve the soup garnished with fresh parsley.
