Finnish Onion Bread (Venäläinen Sipulilimppu)

This delicious Finnish onion bread is a perfect side for meals or a tasty snack. The combination of rye flour and onions makes it particularly flavorful. Preparation Time: 1 hour 30 minutes
Serving Size: 1 loaf
Ingredients:
- 1 dl strong coffee - 1 tbsp salt
- 1.7 l rye flour or dark bread flour
- 1 tbsp vinegar
- 5 dl water
- 2 dl rye flakes
- 50 g margarine or lard
- 1.5 dl finely chopped yellow onion
- 50 g yeast
- ½ dl syrup
Instructions:
1. Boil rye flakes in water with the lid on for about 10 minutes, stirring occasionally.2. After boiling, add margarine or lard, strong coffee, salt, vinegar, and syrup to the pot. Mix well.
3. Crumble the yeast into the mixture and stir until dissolved.
4. Gradually add rye flour and knead the dough until elastic.
5. Allow the dough to rise in a warm place for about 1 hour.
6. Add the finely chopped onion to the dough and knead it evenly.
7. Shape the dough into a loaf and place it in a baking pan lined with parchment paper.
8. Let it rise for another 30 minutes.
9. Bake at 200°C (392°F) for about 30-40 minutes, until the bread is beautifully brown.
