Ingredients:
- 150 g spinach ribbon pasta - 2 carrots
- 100 g rutabaga
- 0.5 tsp black pepper
- Rapeseed oil
- 75 g feta cheese (12% fat)
- 1 tbsp balsamic vinegar
- 1 red onion
- Chopped basil
Instructions:
1. Peel the carrots and rutabaga. Slice the red onion into very thin strips. 2. Cut the carrots and rutabaga into thin ribbons using a vegetable peeler or cheese slicer.
3. Cook the spinach ribbon pasta according to the package instructions. Drain and reserve a bit of the cooking water.
4. Heat rapeseed oil in a pan and add the red onions. Sauté for a few minutes.
5. Add the carrots and rutabaga to the pan, and cook until they are soft.
6. Stir in the cooked pasta, black pepper, and balsamic vinegar. Mix well and add reserved cooking water if needed.
7. Crumble the feta cheese over the pasta and gently mix.
8. Garnish with chopped basil and serve immediately.
