Ingredients:

- 500 g potatoes (e.g., starchy potatoes)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Vegan mayonnaise for serving
- Fresh herbs (e.g., parsley) for garnish

Instructions:

1. Peel the potatoes and cut them into thin strips.
2. Rinse the potato strips in cold water and dry them thoroughly.
3. Place the potatoes in a large bowl and add olive oil, salt, black pepper, paprika, and garlic powder. Mix well to evenly coat the potatoes.
4. Spread the potato strips evenly on a baking sheet lined with parchment paper.
5. Bake in a preheated oven at 200°C (400°F) for about 20-25 minutes until golden brown and crispy, flipping the fries halfway through.
6. Remove the fries from the oven and let them cool for a moment.
7. Serve with vegan mayonnaise and garnish with fresh herbs.
