Ingredients:
- 2 dl quinoa
- 1 can black beans (about 400 g)
- 1 bell pepper
- 1 cucumber
- 1 avocado
- 1 dl plain soy yogurt
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Cook the quinoa according to package instructions and let it cool.
2. Rinse the black beans and drain them.
3. Peel and chop the bell pepper, cucumber, and avocado.
4. In a bowl, combine the quinoa, black beans, bell pepper, cucumber, and avocado.
5. Prepare the dressing by mixing the soy yogurt, lime juice, olive oil, salt, and pepper.
6. Pour the dressing over the salad and mix well.
7. Garnish with fresh cilantro before serving.
8. Serve immediately and enjoy your vegan culinary experience!
