Vegan Pea Soup

A delicious and nutritious alternative to traditional pea soup, perfect for cold winter days. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 2 dl peeled peas (dried or frozen) - 1 medium onion
- 2 carrots
- 2 potatoes
- 1-2 garlic cloves
- 1 liter vegetable broth
- 2 bay leaves
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh dill (for garnish)
Instructions:
1. If using dried peas, soak them in water overnight and rinse before use. 2. Peel and chop the onion, carrots, and potatoes.
3. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté for a few minutes until softened.
4. Add the carrots and potatoes to the pot, and sauté for another few minutes.
5. Add the soaked peas, vegetable broth, bay leaves, salt, and pepper. Bring the mixture to a boil.
6. Reduce heat and let the soup simmer on low for about 30-40 minutes, until the peas and vegetables are tender.
7. Remove the bay leaves and blend the soup until smooth if desired, or leave it chunky.
8. Serve hot, garnished with fresh dill.
