Serving Size: 4 servings
Ingredients:
- 400 g vegan sausages
- 1 tbsp oil for frying
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 tbsp curry powder
- 1 tbsp tomato paste
- 400 g crushed tomatoes (1 can)
- 1 tbsp sugar
- 1 tbsp vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the oil in a pan over medium heat. Add the chopped onion and sauté until soft and translucent.
2. Add the crushed garlic and curry powder, and cook for an additional minute.
3. Stir in the tomato paste and crushed tomatoes, along with the sugar and vinegar. Let the sauce simmer on low heat for about 10 minutes until it thickens.
4. Meanwhile, fry the vegan sausages in another pan until golden brown. Slice the sausages into rounds.
5. Once the sauce is ready, season with salt and pepper. Add the sausage slices to the sauce and mix well.
6. Serve the currywurst garnished with fresh parsley, and enjoy it with fries or bread.
