- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp salt
- 800 ml vegetable broth
- 100 g mushrooms, sliced
- Juice of 1 lime
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large paella pan or skillet over medium heat.
2. Add chopped onion and garlic, sauté until soft.
3. Add bell pepper, zucchini, and green beans. Cook for a few minutes.
4. Stir in the rice, ensuring it absorbs the flavors of the vegetable mixture.
5. Add smoked paprika, turmeric, and salt, mixing well.
6. Pour the vegetable broth into the pan and gently stir.
7. Allow the mixture to come to a boil, then reduce heat and cover, simmering for about 20 minutes until the rice is cooked.
8. Mix in the mushrooms and lime juice, stirring lightly.
