A creamy and dairy-free Alfredo sauce made from cauliflower, perfect for pasta.

Ingredients:
- 1 medium cauliflower
- 2 cups oat milk (or other plant-based milk)
- 2 tablespoons nutritional yeast flakes
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 300 g pasta (e.g., spaghetti or penne)
Instructions:
1. Cook the pasta according to package instructions and drain.
2. Boil the cauliflower in salted water for about 5-7 minutes until tender. Drain and let cool.
3. In a blender, combine the cauliflower, oat milk, nutritional yeast, olive oil, minced garlic, salt, black pepper, and nutmeg. Blend until smooth and creamy.
4. Heat the sauce in a saucepan over low heat until warmed through, stirring as needed.
5. Combine the sauce with the cooked pasta and mix well.
