Ingredients:
- 500 g potatoes - 200 g carrots
- 150 g beets
- 100 g onion
- 150 g zucchini
- 200 g locally produced cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., dill or parsley)
Instructions:
1. Peel and dice the potatoes, carrots, and beets into bite-sized cubes.2. Heat the olive oil in a pan and add the onions. Sauté the onions for about 2-3 minutes.
3. Add the diced potatoes, carrots, and beets to the pan. Cook over medium heat for about 10 minutes until the vegetables start to soften.
4. Stir in the zucchini and season with salt and pepper. Continue to cook for another 5-7 minutes until all the vegetables are tender.
5. Grate or crumble the locally produced cheese over the vegetables and mix well.
6. Garnish with fresh herbs before serving.
