A delicious and vibrant pasta dish featuring fresh vegetables and topped with parmesan cheese. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (such as fusilli or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g parmesan cheese, grated
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and save a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft.
3. Add crushed garlic and diced bell pepper, and continue cooking for a few minutes.
4. Stir in the cherry tomatoes and cook until they begin to soften.
5. Add fresh spinach and cook until wilted.
6. Mix in the cooked pasta and stir well. Add a little reserved cooking water if needed to keep the mixture moist.
7. Season with salt and pepper. Stir in grated parmesan cheese until well combined.
8. Serve the pasta garnished with fresh herbs.
