Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 garlic clove, minced
- 1 medium onion, chopped
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, and sauté for about 3-4 minutes until softened.
3. Add the cherry tomatoes to the skillet and cook for a few more minutes until they start to soften.
4. Stir in the fresh spinach and mix until it wilts down.
5. Combine the cooked pasta with the skillet mixture, adding a splash of reserved cooking water if needed. Season with salt and pepper.
6. Mix in the grated Parmesan cheese and let everything heat through.
7. Serve the pasta garnished with fresh basil. Enjoy!
