A delicious and creamy mushroom pasta that is quick and easy to prepare, perfect for weeknight dinners. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or spaghetti) - 250 g fresh mushrooms (e.g., button mushrooms)
- 1 onion
- 2 garlic cloves
- 200 ml heavy cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little pasta water. 2. Chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until softened.
4. Add the mushrooms to the skillet and cook for about 5-7 minutes until tender and the moisture has evaporated.
5. Pour the heavy cream into the mushroom mixture and stir well. Let simmer on low heat for a few minutes.
6. Add the cooked pasta to the skillet and mix. If the mixture is too thick, add a little reserved pasta water.
7. Grate the Parmesan cheese over the pasta and stir until melted. Season with salt and pepper.
8. Serve warm, garnished with fresh parsley.
