This tasty vegetable pasta is perfect for a weekend dinner. It's packed with colorful veggies and flavor, and while it takes a bit of time to prepare, the result is worth it.

Ingredients:
- 300 g pasta (such as spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 50 g parmesan cheese, grated (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until soft.
3. Add bell pepper and zucchini to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
4. Stir in cherry tomatoes, spinach, oregano, salt, and black pepper. Mix well and cook until the spinach wilts.
5. Combine the cooked pasta with the vegetable mixture and stir well. If needed, add a little reserved cooking water to prevent the pasta from drying out.
6. Serve the pasta topped with parmesan cheese and fresh basil.
