Serving Size: 4-6 servings
Ingredients
- 6 passion fruits- 300 ml heavy cream
- 100 g white chocolate
- 200 ml milk
- 1.5 tbsp cornstarch (Maizena)
- 2 tbsp sugar
- A tiny pinch of salt
- 4 egg yolks
- Sugar cane (for caramelizing)
- 2 passion fruit seeds
- Chopped white chocolate
Instructions
1. Halve the passion fruits and scoop out the insides. Place the shells in an egg carton or similar to make them easy to fill later.2. Pass the passion fruit seeds through a fine sieve into a saucepan and reserve the juice. You should have about 100 ml of juice.
3. Add the heavy cream and chopped white chocolate to the saucepan. Heat the mixture while stirring constantly until the white chocolate has melted.
4. In a separate bowl, mix the milk and cornstarch, then add this mixture to the flavored cream. Also, add the sugar, salt, and egg yolks.
5. Heat the mixture, stirring constantly, until it begins to thicken. Be careful not to overheat, or the egg yolks will scramble.
6. Once the mixture has thickened into a custard, remove the saucepan from the heat and spoon the custard into the passion fruit halves. Use any remaining custard to fill ramekins.
7. Place everything in the refrigerator to chill for a few hours.
8. Just before serving, sprinkle a thin layer of sugar cane over the custard and caramelize with a kitchen torch until crispy.
9. Finish the servings with the passion fruit seeds and chopped white chocolate.
