Ingredients:
- 2 cups heavy cream
- ½ cup milk
- 1 vanilla bean
- 1 whole egg
- 5 egg yolks
- ½ cup granulated sugar
- ¼ cup light brown sugar
Instructions:
1. In a saucepan, heat the heavy cream and milk over medium heat. Split the vanilla bean, scrape the seeds into the mixture, and add the bean pod as well.
2. Allow the mixture to simmer gently for about 10 minutes, ensuring it does not boil.
3. In a bowl, whisk together the whole egg, egg yolks, and granulated sugar until the mixture is pale and fluffy.
4. Remove the vanilla bean pod from the cream mixture and slowly pour the hot cream into the egg mixture while continuously whisking.
5. Divide the mixture evenly among small oven-safe ramekins.
6. Place the ramekins in a baking dish and fill the dish with hot water to create a water bath. Bake in a preheated oven at 300°F (150°C) for about 30-40 minutes, or until set.
7. Allow the crème brûlée to cool, then refrigerate for at least 2 hours.
8. Before serving, sprinkle light brown sugar evenly over the tops and caramelize the sugar using a kitchen torch or by placing them under the broiler until the sugar is melted and bubbly.
9. Let the caramelized sugar harden and serve immediately.
