A delightful dessert that combines classic Crème brûlée with sweet cloudberries. Perfect for summer celebrations or indulgent moments.
Preparation Time: 1 hour (plus cooling time)
Serving Size: 4 servings
Ingredients:
- 200 ml heavy cream
- 200 ml milk
- 4 egg yolks
- 100 g sugar
- 1 tsp vanilla sugar
- 200 g fresh cloudberries
- 2-3 tbsp sugar for caramelizing
Instructions:
1. Heat the heavy cream and milk in a saucepan until just about to boil. Remove from heat.
2. In a bowl, whisk the egg yolks, sugar, and vanilla sugar until the mixture is pale and fluffy.
3. Gradually pour the hot cream mixture into the egg yolk mixture while continuously stirring.
4. Strain the mixture into a bowl to remove any lumps.
5. Divide the mixture among four oven-safe ramekins and place them in a baking dish.
6. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
7. Bake at 150 °C (300 °F) for about 40-45 minutes, until set.
8. Allow to cool at room temperature, then refrigerate for at least 2 hours.
9. Before serving, place cloudberries on top of each ramekin and sprinkle with sugar. Caramelize the sugar using a kitchen torch until golden brown.
10. Allow to cool briefly before serving.
