A classic French dessert that delights with its delicious vanilla flavor and crispy sugar crust. This recipe is easy to memorize and can be adapted to your liking.
Preparation Time: 30 minutes + cooling
Serving Size: 4 servings

Ingredients:

- 1 cup heavy cream
- 1 cup milk
- 1 vanilla bean (or 2 teaspoons vanilla sugar)
- 4 egg yolks
- 1/2 cup sugar (plus 2 tablespoons for caramelizing)

Instructions:

1. In a saucepan, heat the cream and milk together. Split the vanilla bean and scrape the seeds into the mixture, adding the bean pod as well. Heat until just before boiling, then remove from heat and let sit for a few minutes.
2. In a bowl, whisk the egg yolks and sugar together until light and creamy.
3. Gradually pour the hot cream mixture into the egg yolk mixture, stirring continuously. Remove the vanilla bean pod.
4. Strain the mixture into another bowl and divide it among four oven-safe ramekins.
5. Place the ramekins on a baking sheet and pour hot water into the sheet until it reaches halfway up the sides of the ramekins.
6. Bake in a preheated oven at 300°F (150°C) for about 30–35 minutes, until set.
7. Allow to cool at room temperature, then refrigerate for at least 2 hours.
8. Before serving, sprinkle sugar on top and caramelize it using a kitchen torch or under a broiler until golden brown and crispy.
