Serving Size: 8-10 servings
Ingredients:
- 1 dl almond flour
- 1 dl sugar
- 1 dl all-purpose flour
- 250 g browned butter
- 8 egg whites
- 50 g sugar (additional)
- 1 dl passion fruit puree
Instructions:
1. Brown the butter in a pan until it turns a beautiful nutty brown color, then let it cool.
2. In a bowl, whip the egg whites with the additional 50 g of sugar until stiff peaks form.
3. In a large bowl, combine almond flour, all-purpose flour, and 1 dl of sugar.
4. Add the cooled browned butter to the dry ingredients and mix until smooth.
5. Gently fold the whipped egg whites into the mixture.
6. Incorporate the passion fruit puree and mix lightly.
7. Pour the batter into a greased baking pan.
8. Bake at 175°C (350°F) for about 25-30 minutes or until the cakes are golden brown.
9. Allow to cool before serving.
