This delicious vegetable pasta combines fresh vegetables and pasta. This recipe is quick to prepare and perfect for a weekday dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Boil the pasta according to the package instructions in salted water. Drain and reserve a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for about 3-4 minutes until soft.
3. Add the bell pepper and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and spinach. Cook until the spinach is wilted.
5. Combine the cooked pasta with the vegetable mixture. Mix well and add a little reserved pasta water if the pasta seems dry. Season with salt and pepper.
6. Serve warm, garnished with fresh basil.
