Raspberry Tiramisu with White Chocolate

A delightful twist on the classic tiramisu, featuring luscious raspberries and creamy white chocolate. Preparation Time: 20 minutes (plus chilling time)
Serving Size: 6 servings
Ingredients:
- 250 g mascarpone cheese
- 100 g white chocolate
- 2 dl strong coffee
- 200 g raspberries (fresh or frozen)
- 200 g savoiardi biscuits
- 2 tablespoons sugar
- 1 teaspoon vanilla sugar
- Fresh raspberries for garnish
Instructions:
1. Melt the white chocolate in a water bath or microwave.
2. In a bowl, mix mascarpone cheese, melted white chocolate, sugar, and vanilla sugar until smooth.
3. Brew the coffee and let it cool slightly.
4. Quickly dip the savoiardi biscuits in the coffee, ensuring they don’t get too soggy.
5. Start layering: place a layer of soaked biscuits in a serving dish.
6. Spread half of the mascarpone-white chocolate mixture over the biscuits.
7. Add a layer of raspberries on top of the mixture.
8. Repeat the layers: biscuits, mascarpone-white chocolate mixture, and raspberries.
9. Cover the tiramisu with plastic wrap and let it chill in the refrigerator for at least 4 hours, preferably overnight.
10. Before serving, garnish with fresh raspberries.
